🥛🍞 Milk Brioche Rolls

Milk brioche rolls are soft, buttery, slightly sweet bread rolls with a fluffy, cloud-like texture. They’re perfect for breakfast, burgers, or served warm with butter and jam.
🧾 Ingredients
Dough
- 3 ½ cups all-purpose flour (420 g)
- ¼ cup sugar (50 g)
- 2 ¼ tsp instant yeast (1 packet)
- 1 tsp salt
- ¾ cup warm milk (180 ml)
- 2 large eggs (room temperature)
- 4 tbsp unsalted butter, softened (60 g)
Egg Wash
- 1 egg
- 1 tbsp milk
👩🍳 Instructions
1️⃣ Activate the yeast
In a bowl mix warm milk, sugar, and yeast. Let sit for 5 minutes until slightly foamy.
2️⃣ Make the dough
Add eggs, flour, and salt. Mix until a dough forms.
3️⃣ Add butter
Knead the dough and gradually add softened butter. Knead for 8–10 minutes until the dough becomes smooth and elastic.
4️⃣ First rise
Place dough in a lightly oiled bowl, cover, and let rise for 1–1½ hours until doubled in size.
5️⃣ Shape the rolls
Punch down the dough and divide into 9–12 equal pieces.
Shape into smooth balls and place in a greased baking pan.
6️⃣ Second rise
Cover and let rise again for 30–40 minutes until puffy.
7️⃣ Egg wash
Mix egg and milk and brush gently over the rolls for a shiny finish.
8️⃣ Bake
Bake at 180°C (350°F) for 18–22 minutes until golden brown.
